Roasted Root Medley for 2
recipe from the Beachbody 21 Day Ultimate Reset (modified a little)
1/2 medium yam, washed, peeled and cut into large chunks
1 large carrot, washed, peeled and cut into chunks
1 large beet, washed, peeled and cut into chunks
1/2 yellow onion, peeled and cut into large wedges
5 garlic cloves each cut in half
1 Tablespoon of extra virgin olive oil
Himalayan salt to taste
Preheat oven to 400 degrees F. In a bowl, toss all ingredients together, Spread on a cookie sheet and back for 40 to 50 minutes or until tender. Turning once or twice to prevent burning. Serves 2
