Easy Veggie Brown Rice

21 Day Fix approved.
The entire recipe is pretty easy.
2 eggs = 1 red
Mixed veggies = 2 greens
Brown rice = 2 and 1/2 yellows
Coconut oil = 1 teaspoon

Cook the brown rice. About 1/2 cup dry. (takes about 30 minutes)
When rice is close to ready begin to stir fry the veggies for 3 to 4 minutes.
Add 2 eggs and scramble.
Mix in brown rice.
Add your seasoning. I used Braggs Liquid Aminos (similar taste to soy sauce)

I ate 1/2 of it.
1/2 red
1 green
1 1/2 yellow

 

Left overs for dinner or for tomorrow’s lunch.
